Chilis out to dry inside the dzong in Trashigang. Chilis are an absolute staple in Bhutanese cuisine, not only for monks but society as a whole. Take some of those small and innocent looking green fruits and mix them with cheese and you get the famous national dish that virtually no Bhutanese person can resist; Ema-datsi.
If you travel in Bhutan you will find it largely absent from the hotel or tourist focused restaurants, but if you peak into the kitchen you will see all the drivers and guides feasting on it. Sometimes a small plate of Ema-datsi will be available in the buffet, by all means have a go, just be careful, those little thingies pack a punch!
